What is Kimchi?

Kimchi is a traditional Korean dish made by fermenting salted vegetables—most commonly napa cabbage and radish—with seasonings like chili powder, garlic, ginger, and fish sauce. The word “Kimchi” comes from an old Chinese word meaning “soaked vegetables.” It represents a centuries-old way of preserving food through fermentation.

A Brief History of Kimchi

Kimchi dates back to ancient Korea, long before the Three Kingdoms era. Early Kimchi was simply salted or pickled vegetables. After chili peppers arrived in Korea during the late 16th century, spicy Kimchi as we know it began to emerge. By the Joseon Dynasty, many regional types developed, leading to today’s huge diversity of Kimchi.

How Many Types of Kimchi?

  • Napa Cabbage Kimchi (Baechu Kimchi) – Classic, most popular kind
  • Kkakdugi – Cubed radish Kimchi
  • Chonggak Kimchi – Made from ponytail radish
  • Yeolmu Kimchi – Young summer radish greens
  • Dongchimi – Watery radish Kimchi, mild and refreshing
  • Baek Kimchi – “White” Kimchi, no chili pepper, mild taste
  • Pagi, Gat, Buchu Kimchi – Green onion, mustard leaf, chive Kimchi

How to Make Kimchi (Kimjang Experience)

Kimchi making is a Korean cultural event, especially during the winter Kimjang season (Nov–Dec) when families and neighbors gather to prepare large amounts of Kimchi for the year.

  1. Salt and soak fresh cabbage or radish
  2. Prepare Kimchi paste (chili powder, garlic, fish sauce, shrimp, etc.)
  3. Mix the paste with the vegetables thoroughly
  4. Pack into jars and let it ferment
